Zaza's Pizzeria is the Lakeview East slice shop that turned two brothers' apartment experiments into one of Chicago's most talked-about New York-style pies.

Brett Nemec started washing dishes at 16, worked his way through culinary school and up to head chef at a top Naperville restaurant, then realized the thing he actually wanted to cook was pizza. He and his brother Chadd turned their Oak Park apartment kitchen into a test lab, and one late-night idea, brushing rosemary garlic oil onto the crust, became the signature of the whole company. They opened Zaza's on Clark Street in December 2021, and Bon Appétit, the Chicago Tribune, Steve Dolinsky, Barstool and Eater all came calling. The craft is the pitch: dough slow-fermented for at least 48 hours with a pre-ferment for a lighter, crispier crust, Stanislaus plum tomatoes, Grande whole-milk mozzarella and Sicilian olive oil, every pie hand-tossed in one size, fired in a 575-degree deck oven and finished with that garlic-rosemary oil and Maldon salt.

The menu adds starters, salads, grandma pies and desserts. The family runs it together, with their mom Sue and stepdad Steve Gambla as partners, and it has since spun off Nemec Brothers in Geneva and Glen Ellyn and a second Zaza's in Lincoln Park. It's closed Mondays and opens at noon most days, with Resy for tables and Toast for pickup.
