John Panvino started there as a teenage busboy, learned pizza-making directly from Pat, worked his way up to manager and then partner, and bought the business outright about five years ago; he now runs it with his wife, Gabriela. Pat, now 89, still runs the banquet hall across the street in the restaurant's original building. The pizzeria and trattoria today share one building with two separate kitchens handling dine-in, carryout, and catering, turning out thin, pan, and stuffed-crust pizza.
Panvino also gives roughly 15% of a night's total sales to local schools, churches, and youth programs on select fundraising nights. Saturdays bring a drink-and-pizza package deal, and the trattoria's Family Combo -- a one-topping 14-inch thin pizza, eight pieces of fried or barbecue chicken, and a two-liter soda -- has long been a regular order for families.
