The Prospect leans hard into its open-kitchen setup — the pitch isn't just dinner, it's watching the actual cooking happen, which in a downtown Mount Prospect bistro feels less like a gimmick and more like a transparency flex.

Big Fish Hospitality tapped two Chicago fine-dining veterans to run it -- chef Mauro Berruti (Gibsons Italia, Bazaar Meat Chicago, Chicago Cut Steakhouse) and GM Garrett Supples (Chicago Diner, Frontier, Ina Mae Tavern) -- on a menu built around seafood, pasta, and charcoal- and wood-fired cooking.

It's built into the 20West apartment building, giving it a built-in neighborhood crowd on top of destination diners, and 250-plus reviewers have kept it at a 4.6-to-4.7 range depending on the platform you check. The happy hour windows are real and specific — weekday-into-Sunday early evenings, plus a late-night Friday/Saturday window that's clearly aimed at a different crowd than the 5 PM one. For a suburb not usually known for a serious bistro scene, this is a legitimately serious bistro.
