The New York native, who has also been a marine engineer, a journalist, a playwright and a certified pizzaiolo from Italy's Scuola Italiana Pizzaioli, moved to Chicago in 1993 and spent about twenty years chasing that crunch-and-chew balance at home. He and his wife and co-founder, Dana Hokin, turned their house into a test kitchen and deconstructed hundreds of pies until friends and family demanded a restaurant. Robert's opened in 2016 and now sits on the Ogden Slip in Streeterville with a riverfront patio. The result is 14-inch, brick-oven, thin-crust artisan pizza built on the house "Za Dough," and the critics noticed. 50 Top Pizza named it one of the top 50 pizzerias in the U.S. and ranked it #35 in the world.

The Rita, with buffalo mozzarella, oven-roasted tomatoes and basil, is the purist's order. A Walk in the Woods layers truffle cream and two bloomy cheeses, and the Cali Italia brings fig jam and prosciutto. Happy hour, Monday through Thursday from 3:30 to 5:30pm, puts $8 super slices next to $12 cocktails. Football Sundays and Mondays bring $31 beer buckets during games, and weekend brunch adds za-dough zeppoles. Reservations and to-go orders are on the site, and $1 from some seasonal pies goes to charity.
