Publican Tavern is the airport offshoot of The Publican, Paul Kahan's Fulton Market beer hall, tucked into O'Hare's Terminal 3 near gate K1 — which makes it one of the few places at the airport where your layover meal actually tastes like Chicago.

It's run with airport concessionaire HMSHost, it's a smaller, simpler menu than the original, and The Infatuation is honest that it doesn't match the downtown flagship, but it's solid and a big step up from a terminal food court. The orders reviewers point to are the sticky burnt chile wings, a fried fish sandwich with herby gribiche on a brioche bun, and a turkey salad with honey-Tabasco vinaigrette; the menu has also carried a 'Hot' Doug Sohn hot dog, a nod to the beloved late Chicago encased-meats legend. Breakfast is served too — waffles with honey butter and strawberry jam, or a full Publican breakfast — and there's a kids menu and grab-and-go for tight connections.

Like its parent, the drinks program is built around beer, with a focus on Chicago craft brewers and a wine list chosen to match. There's no happy hour or standing deal (this isn't a pre-theater spot, despite what older listings said); it's simply the best way to eat and drink well before a flight out of Terminal 3. Hours follow the terminal's schedule, so check the airport dining directory before you count on it.
