Publican Quality Bread started in 2012 as off-hours baking inside The Publican's own kitchen, part of the One Off Hospitality restaurant group that also runs Publican Quality Meats (already a separate listing in this database) — before long the bread program outgrew borrowed kitchen time, moved into the basement of Publican Quality Meats, and finally got its own dedicated facility in late 2014 and a retail storefront on Grand Avenue after that.

A Jambon Beurre that only appears on the menu starting at 1pm, alongside James Beard Award-winning sourdough and kouign amann — from baker Greg Wade's dedicated bread program for the One Off Hospitality group.

Head baker Greg Wade won the 2019 James Beard Award for Outstanding Baker for the program, and later wrote his own bread book, Bread Head, in 2022 — real, individually-earned recognition rather than a halo effect from the parent restaurants. The bakery runs on a genuine daily schedule rather than just stocking a case all day: pastries and fresh bread from 7 a.m., The Big Sandwich and tartines starting at 10, and a Jambon Beurre that doesn't appear until 1 p.m. The hearth loaf lineup alone is specific enough to matter — sourdough, olive, a '1979' multigrain, honey oat porridge, toasted sesame — alongside malted and seeded rye, baguettes, and a pastry case running croissants through kouign amann and a pear brioche with maple pecan frangipane.

A second location has since opened in Oak Park. No happy hour applies to a bakery-cafe built around daily bread production, but a James Beard-winning baker's actual bread program is its own kind of credential.
