Pomeroy opened on Winnetka's Spruce Street in 2021 as the sixth restaurant from Ballyhoo Hospitality, and CEO Ryan O'Donnell was explicit about the goal: an approachable, casual French bistro serving proper, classic food, not a special-occasion splurge.

A 2021 Ballyhoo Hospitality French bistro in downtown Winnetka, led by ex-Blanchard chef Jason Paskewitz — classic Parisian cafe cooking with a sibling fast-casual spinoff, Petit Pomeroy, in the same kitchen.

Executive chef Jason Paskewitz brings real pedigree to the kitchen — two decades spent at The Blanchard, a Jean Banchet award-winning French restaurant in Lincoln Park, reinspiring Chicago's love of classic French cooking before bringing that same sensibility to the North Shore. Ballyhoo's VP of Culinary, Jayson Euler, has also been filmed cooking at Pomeroy, including a French-style ham and cheese segment on WGN's Sunday Brunch. The restaurant is modeled on the great cafes of Paris — warm service, approachable cuisine, a classic yet comfortable setting that doesn't take itself too seriously.

A sibling fast-casual concept, Petit Pomeroy, operates out of the same kitchen for a quicker version of the same idea. No discount or happy-hour deal exists here; the pitch is simply honest, well-executed French bistro food in a part of the North Shore that didn't have one before.
