Noah Sandoval opened it in 2016 on Walnut Street, a quiet block of the West Loop just off the Fulton Market crush. It has earned two Michelin stars again and again since, took the Jean Banchet Award for Restaurant of the Year in 2022, and in 2025 the James Beard Foundation named Sandoval Best Chef: Great Lakes, eight years after Food & Wine called him one of its Best New Chefs. There is one way to eat here: an extended tasting menu that changes constantly, cooked by Sandoval, chef de cuisine Colin McHugh and their team. It's contemporary American in the broadest sense, with courses confident enough to let a single seasonal ingredient carry the plate. Wine director Emily Rosenfeld runs the pairings and the list. The tone is less stiff than the stars suggest.
There's no dress code, photos are welcome as long as you skip the flash, and the staff will feed your parking meter. Planning matters. Reservations go out through Tock on a rolling 90-day calendar, every available table is shown online, and there's a waitlist if your night is full. Tell them about allergies at least 24 hours ahead. For the full splurge, book the Loft: a furnished apartment directly above the restaurant, packaged with dinner for two at the kitchen table, where you sit front row to the cooks. There's no valet; use the meters on Desplaines and Union or the garage at 650 W Fulton Market.
