His friends and former colleagues, brewer Trevor Rose-Hamblin and chef Matthias Merges, picked up the project and finished it, opening in late 2016 alongside co-founder Jeff Linnemeyer, who'd left the financial industry to get into it. Rose-Hamblin learned brewing through apprenticeships at Pipeworks, DryHop, and Flossmoor Station before becoming head brewer here. The beer backs up the story: a 2019 Great American Beer Festival gold for Beezer (hazy IPA), a 2021 silver for Della (German-style Kölsch), and a 2024 World Beer Cup gold, again for Beezer.
The brewery has since expanded distribution across Illinois and Wisconsin and added production facilities in the West Loop. Bar tops made from old rail cars and easy access from O'Hare round out the practical appeal.
