Nadu

Super GemLincoln Park · Modern Indian Community-sourced, unverified
📍 2518 N Lincoln Ave, Chicago, IL 60614

Sujan Sarkar trained in Mumbai before spending 11 years in London's kitchens, becoming head chef at Automat at just 27, then opened his own restaurant, Almada, before relocating to the US to help develop Rooh in San Francisco.

The paneer ghotala has real depth to it, and the lamb gilafi seekh kebab is the order that makes people reconsider what Indian food in Lincoln Park can be.

He brought Rooh to Chicago's Randolph Street in 2019, then broke off from that partnership to build his own group — Indienne (Chicago's first Michelin-starred Indian restaurant), Sifr, and Swadesi — with Nadu opening April 3, 2025, as his fourth Chicago restaurant. The name means 'homeland' in Tamil, and the menu is built to actually travel India region by region rather than flattening the country into one cuisine — Naga smoked chili pork ribs from Nagaland sit on the same menu as dishes from Kerala and Odisha.

Nadu has already picked up a Michelin Bib Gourmand and a James Beard Best New Restaurant semifinalist nod, and the concept has since expanded to Arizona. Takeout must be ordered in person by a firm cutoff, no phone or online ordering.
