Monster Ramen's whole identity traces back to chef-owner Katie Dong's childhood in Nanjing, hopping between beef-noodle-soup stalls with her dad — a memory she's turned into a gyukotsu (beef-bone) broth that's become the signature of her 38-seat Logan Square shop.

It's a deliberate break from the pork-bone base most ramen leans on, and Dong, a Guy's Grocery Games title winner who previously ran the kitchen at the well-regarded Strings Ramen, backs it up with real technique: house-made alkaline noodles aged up to nine days, and a signature bowl stacked with sweet-soy-marinated American wagyu chashu, wagyu rib roast, and a house 'beef jam.' A vegetarian miso yasai option (braised shiitake and kikurage mushrooms) and a seasonal spicy shio with house chile oil and fresh lime round out a menu that clearly treats beef ramen as its own distinct category worth doing right.
