Lexington Betty Smokehouse runs out of Pullman's former One Eleven Food Hall space, and the chef behind it, Dominique Leach, didn't come up through barbecue the usual way — she trained classically under James Beard Award winner Tony Mantuano and chef Sarah Grueneberg at Michelin-starred Spiaggia before she ever ran a smoker.

A full vegan BBQ menu (portobello fries, fried cauliflower, smoked vegan Italian sausage, vegan charcuterie) running alongside Food Network-crowned brisket and rib tips at a Pullman smokehouse Good Morning America called Chicago's best barbecue.

The name comes from her grandmother, Betty King, and the Mississippi home cooking Leach grew up on; she and her wife Tanisha started it as a food truck, and when that truck burned in a fire, they opened this brick-and-mortar instead of walking away. The barbecue leans Central Texas and Memphis — applewood-smoked brisket and rib tips, a house sauce that nods to Chicago's own mild sauce, soulful sides like candied yams and collard greens — but there's a real vegan menu running alongside it too: portobello fries, fried cauliflower, smoked vegan Italian sausage, even a vegan charcuterie plate.

Leach was named 'Master of 'Cue' on Food Network's BBQ Brawl with Bobby Flay in 2023, and Good Morning America has called this Chicago's best barbecue — accolades that actually track with what's coming out of the Pullman kitchen.
