Jin Soo (진수) means rare, exceptionally good food, half of the Korean idiom jin soo sung chan, a lavish feast with an abundant spread of dishes. The Niles restaurant on Dempster Street builds its menu around that idea, with tabletop grilling done carefully and cuts that are prime Black Angus only, aged in-house. Even the pork goes through the house aging process. The headliners are the jin chadol (brisket point, sliced thin and gone in seconds on the grill), ggotsal boneless short rib and a 12 oz ggot deungsim ribeye. Every meat order comes with your pick of doenjang stew, kimchi stew or a savory egg soufflé.

For groups of three or more, the Jin Soo Sung Chan feast is the move: five premium cuts, banchan, scallion salad, egg soufflé, a stew and volcano fried rice for $50.95 a head. Add a somaek tower (one soju, three beers) to make it official. Lunch is where the value lives. A rotating $11.95 daily special runs Monday through Friday, from janchi guksu on Monday to spicy squid on Friday, and regular lunch adds yook gae jang, galbi tang and cold naengmyeon. Lunch runs 11:30am to 2:30pm and dinner 4:30 to 9:30pm Monday through Saturday, with dinner only from 3pm on Sunday.
