Founder Paula Haney was a pastry chef at Trio, one of Chicago's top fine-dining kitchens, before leaving to chase a shop she and her husband Craig had long joked about — she started selling pie at the Green City Market in 2007 and opened this Chicago Avenue storefront on March 14, 2009 (Pi Day, deliberately).
