HaiSous is the second act of Thai Dang's career, and the better story for it.

He trained as a classical French fine-dining chef and opened Embeya in the West Loop — an Esquire best-new-restaurant pick — until a business partner embezzled $300,000 and fled to Spain, closing it in 2015. Two years later he and his wife Danielle opened HaiSous on a Pilsen corner instead: elevated Vietnamese cooking on his side, a modern cocktail and wine program on hers. It has since collected five Michelin Bib Gourmands and multiple James Beard nominations, including 2026, with Thai a 2025 Best Chef: Great Lakes finalist. Happy hour is the low-commitment way in.

Wednesday through Sunday from 4 to 5:30pm, every happy hour plate is $10 and gluten-free — the list includes Chef Thai's caramelized fish sauce wings with chili, garlic and scallion, crispy calamari with tamarind sauce, papaya salad with house-made beef jerky and a confit eggplant salad — alongside $10 cocktails, $11 wine by the glass and beer from $5. Grab two seats at the bar or bring a group of up to six to the dining room. If you want the full experience, three-course menus start at $80 per person, and dishes like the crab fried rice and the grilled meat platter are the ones regulars build a table around. It's closed Monday and Tuesday; Wednesday through Saturday run 4 to 9pm, and Sunday adds a 10am-2pm brunch before dinner service.
