Emilio's sits on an unassuming stretch of Roosevelt Road in Hillside, and the outside gives no hint of the colorful Spanish dining room inside.

The paella is the anchor, and Friday night live music turns dinner into a real evening out.

The pedigree is real. Chef Emilio Gervilla came to the US in 1973, partnered with Lettuce Entertain You to open Café Ba-Ba-Reeba in 1985, then struck out on his own here in 1988. Chicago Magazine named it one of the city's 10 best new restaurants, and the local press started calling him Chicago's 'Tapas King.' The menu reads like a greatest-hits tour of Spain: Emilio's famous patatas con alioli, tortilla española, gambas a la plancha, bacon-wrapped dates and croquetas, plus a full lineup of paellas. The Paella a la Valenciana ($32) brings chicken, shrimp, mussels and clams in saffron rice, and the squid-ink Paella Imperial ($35) is the showpiece.

The deal to know is the Tapeo happy hour, Wednesday through Saturday from 4:30 to 6PM at the bar and on the patio: $5 beer, $6 Spanish house wine, $10 sangria by the glass, $5 cold tapas and $8 hot ones, from shrimp in garlic butter to mini bocadillos with garlic fries. Sangria comes in six flavors, and a three-pour flight is $15. Sherry and port flights are there for the purists. Reservations go through Toast, and it's closed Monday and Tuesday. Catering and private parties are a big part of the business.
