Do-Rite started in February 2012, when Jeff Mahin and Francis Brennan (then working together at the two-Michelin-star L2O) opened a tiny counter on Randolph Street in the Loop, with a rule that still holds: small batches, fried all day, nothing held over. The morning order is a buttermilk old fashioned or a vanilla bean glazed and a coffee, or one of the breakfast egg sandwiches if you need something that counts as a meal.
Later in the day, the chicken tenders and chicken sandwiches take over, and the case runs through Valrhona chocolate cake, French cruller, Boston cream and the seasonal 'donut of the moment.' Gluten-free donuts are fried in their own fryer, and there are vegan options. Weekday hours are roughly 6:30AM to 4:30PM with later weekend openings; Willis Tower's building access shapes the schedule, so check before a weekend trip.
