Do-Rite started in February 2012, when Jeff Mahin and Francis Brennan (then working together at the two-Michelin-star L2O) opened a tiny counter on Randolph Street in the Loop, with a rule that still holds: small batches, fried all day, nothing held over. The case is the same small-batch lineup: buttermilk and cinnamon old fashioneds, a Michigan apple fritter, Boston cream, raspberry bullseye, a cheese danish and the pistachio-Meyer lemon donut that's become a signature. Breakfast egg sandwiches and the chicken sandwiches cover the savory side, and the coffee is brewed fresh all day.
Gluten-free donuts are fried separately, and there's a vegan trio (orange olive oil, maple chai, double chocolate). Hours run early: 6AM to 2PM Monday through Thursday and to 4PM Friday through Sunday.
