The Cary café on Main Street opened in November 2019 as the company's third café, inside a roughly 100-year-old building in the middle of downtown Cary that the design firm Jax and Jude reworked for the café. It's now one of a small family of shops in Barrington, Crystal Lake, Libertyville and Palatine. Every bean poured here is roasted in small batches at the company's Roasters Lab in Crystal Lake and driven over. The sourcing is the kind roasters like to talk about and most don't actually do: direct partnerships with growers from Chiapas, Mexico and La Unión, Colombia to Rwanda's Kinini village and Papua New Guinea's Chuave highlands. Each coffee is roasted to show what its farm and processing taste like rather than to hit one house flavor.
Expect a rotating set of single origins (a winey, lavender-noted anaerobic Rwanda and a chocolatey Colombian were on the shelf this fall) alongside blends like the cocoa-and-raspberry Yeti's Revenge. The baristas know regulars by name and by order, which is the whole point of a hometown café. It opens at 6am Monday through Saturday and 7am on Sunday, and closes at 4pm every day. Order ahead online, or take home a bag of whatever you liked.
