Before it was Cobblestone, this North Center address was The Northman, a cider bar that opened in 2016 after a few false starts and closed for good in February 2020 when its owners sold the building.

Markus Chwajol -- who'd just closed his acclaimed River North spot Bohemian House (a Michelin Bib Gourmand winner serving Czech, German, Hungarian and Austrian food with an American twist, 2014-2018) -- took over the space and renamed it Cobblestone, planning a shift toward contemporary European cooking while keeping the Northman's deep cider list of 50-plus ciders and beers from around the world.

The timing was brutal: Cobblestone opened to the public right as COVID hit, got forced shut twice, and didn't properly reopen until May 2021 under Executive Chef Michael McCloud. The renovation added a literal cobblestone doorstep, custom historic doors, and a sidewalk café that gives the place its name.
