Nothing about it has been polished for the times. It doesn't take reservations, so you walk in and wait, and weekend lines spill out the door. It's BYOB, so bring your own soju or beer. The banchan that hits the table first is regularly called some of the best in the city. The order is chadol gui: paper-thin slices of unmarinated brisket that cook in seconds on a stone pan at the table. Every tabletop meat dish here serves two. Get the chadol, the beef tripe or the thick-cut sirloin, and the meal doesn't end when the meat's gone.

The server comes back, works rice, kimchi and whatever's left into the hot pan, and lets it crisp into fried rice with a crust on the bottom. Regulars will tell you that's the best part. If you want charcoal instead, the galbi and bulgogi come off the broiler, and the haemul pajeon (seafood scallion pancake) is the starter to share. For a summer visit, mul naengmyeon, buckwheat noodles in icy beef broth, is the classic. Cho Sun Ok opens at 10:30am daily and closes at 9:30pm (9pm Sunday), with last call half an hour before. The Irving Park and Montrose Brown Line stops are both close, and parking is on the street.
