Celeste doesn't pick a lane, and that's the whole pitch: it's four different bars stacked inside one real piece of Chicago architecture, a building designed by Louis Sullivan back when River North looked nothing like it does now.

Walk in off Hubbard Street and you're in the Whiskey Bar, a comparatively low-key room built around a serious whiskey collection and straightforward American food — burgers, tacos, the kind of thing that soaks up a happy hour pour without much fuss. Head up a floor and the vibe shifts hard into the Deco Supper Club, all turn-of-the-century detailing and a cocktail list built for a longer night. Keep climbing and there's a fourth-floor Rooftop Garden with a retractable glass roof, open and usable in every season, which is the kind of thing that actually justifies a trip here even when the ground-floor bar scene reads as fairly ordinary. By midnight, the top levels turn into a full disco — bottle service, a cover crowd, the works.

It's not subtle and it's not trying to be a quiet date-night spot; Time Out's own read is that the food is beside the point and the real reason to come is the building and the night it turns into after 11. If you're chasing a single, focused drink program, there are sharper rooms in River North. If you want one address that covers a mellow whiskey pour, a glam supper club, and a rooftop dance floor without changing your coat-check ticket, Celeste is built exactly for that.
