Capriccio Artisan Pizza & Coffee brought real Roman-style pizza to Lincoln Square in March 2025, and the chef behind it, Guillermo Paolisso, earned the credibility the hard way — he grew up in Italy working on dough and fermentation technique, then spent time as executive chef right next door at Artango Bar & Steakhouse before striking out with his own place.

The pizza list runs Rossa, Bianca, Margherita and Funghi alongside the namesake Capriccio pie (prosciutto di Parma, arugula), plus focaccia sandwiches, salads and bakery items for the daytime crowd, and it pours La Colombe coffee to round out the all-day format implied by the name.

It's a legitimately different register of pizza than the deep-dish and tavern-style options that dominate most Chicago neighborhoods.
