The late Burt Katz built his reputation on a pan pie with a dark, crunchy ring of cheese fried against the edge of the pan, a style people now credit as the ancestor of half the city's pan pizzas. Anthony Bourdain came in 2012 for No Reservations and said Burt's was the only deep dish pizza he ever loved, Check, Please! creator David Manilow called Burt one of his favorite characters, and Food & Wine named it Illinois' pick in its best pizza in every state list. The current owners, longtime regulars who took over in 2017, pledge to make the pies only the way Burt did, from the original recipes to his sausage blend. The menu is short on purpose: pizza-in-the-pan in 10, 12, 14 or 16 inches, about a dozen toppings including giardiniera and fresh garlic, a half-dough option for a thinner pie, a few newer appetizers like mac and cheese bites and fried pickle spears, and cannoli for dessert.

Beer, wine and root beer round it out, and there's a heated patio open year-round plus a backyard gazebo for parties. Reservations are recommended on Fridays and Saturdays, and calling ahead to pre-order your pie cuts the wait. Closed Mondays.
