Chef Tom Carlin left Galit and Dove's Luncheonette to open Burl with his wife Rachel, and the live wood-fired hearth running the whole menu is the reason a 4.8-star restaurant exists on a quiet Evanston side street.

The pappardelle Bolognese is rich in the way it's supposed to be, and the lamb chops hold their own against it — a real toss-up on what to order.

Carlin's farmer-driven approach means the menu moves with what's actually available rather than running the same printed list year-round, but the constant is the hearth itself -- everything from vegetables to the lamb chops gets real time over live fire. The pappardelle Bolognese is rich in the way it's supposed to be, and the lamb chops hold their own against it, which makes ordering both and splitting a genuinely reasonable move.

The restaurant is closed Monday and Tuesday, and Sunday runs an unusual split schedule -- brunch from 10am to 1:30pm, then dinner service starting back up at 5pm -- so check which Sunday window you're aiming for before you go.
