Owner Matt Sussman -- who also runs Table, Donkey and Stick and the sandwich counter Danke -- opened it in July 2024 and brought his own charcuterie program along, some of which shows up on his other menus too. Chef Madalyn Durrant, a relative newcomer who arrived in Chicago in 2022 to take over the kitchen at Webster Wine Bar and was a regular at Table, Donkey and Stick before joining Parisette, builds a seasonal menu around regional French cooking filtered through Midwestern ingredients. NBC Chicago's Food Guy put it well: textbook bistro cooking at down-to-earth, neighborhood-appropriate prices rather than special-occasion pricing for special-occasion food.
The Wellfleet oysters and pomme frites get the most love, but happy hour is its own draw -- Monday runs discounted all night, while oysters, martinis, and wine get weekday markdowns otherwise. Closed Sundays.
