Paul Kahan and Donnie Madia opened avec next door to their own Blackbird in 2003, with chef de cuisine Koren Grieveson — a South African-born CIA grad who'd been Blackbird's sous chef since 1998 and had worked under Michael Mina in San Francisco — building the small-plates menu around chorizo-stuffed dates, housemade focaccia, and slow-roasted pork shoulder before leaving for New York in 2012. "Avec" means "with" in French, and the communal tables are the actual point: you're meant to drink the wine with strangers, not just with your own table.
