Asador Bastian turns a 140-year-old River North townhouse — the 1883 'Flair House' — into a Basque-inflected steakhouse serious enough to land a spot on the New York Times' 2024 list of the 50 best restaurants in the country and a Best Hospitality nomination at the 2026 Jean Banchet Awards.

Chef-owner Doug Psaltis builds the menu around jamón ibérico and a black truffle beef tartare, but the real centerpiece is the Txuleton: a well-marbled, bone-in cut roasted over live coals and sold by the pound, the kind of dish that's less an entree than an event. Dessert leans just as rich — golden chocolate hazelnut cake, a burnt Basque cheesecake.

The ground-floor Bar Room takes walk-ins from 4pm daily; the upstairs Dining Room is reservation-only and books up to a month out.
