Adalina Prime is the sister steakhouse to Adalina, the same Fulton Market group's Italian flagship, and it spends its 10,500 square feet making the case that a steakhouse doesn't have to be staid — a two-story wine cellar anchors the room, mural-covered walls run the length of the space, and an open kitchen puts the whole operation on display.

Chef/partner Soo Ahn (who also leads ARLA on Oak Street for the same Hospitality Included group) runs the program alongside executive chef Nemanja Milunovic, an Alinea and Aba alum, and chef de cuisine Andy Lownes, who came up through Gibsons Italia. The steak program centers on full-blood Wagyu sourced from Japan and Australia, with dry-aged ribeye and a Wagyu beef tartare pulling double duty between tradition and showmanship — caviar served alongside housemade nuggets is the kind of playful-but-serious touch that tells you exactly what kind of steakhouse this wants to be. It opened September 2, 2025.

The real find is the happy hour: weekdays, 4 to 6 p.m., at the bar and lounge, $9 handcrafted cocktails and signature martinis alongside chef-driven bites — a genuinely good price for a steakhouse operating at this level. Reservations open at midnight daily for the following 14 days, and private dining runs anywhere from 20 to 200 guests.
