Manhattan Royale with 24-karat-gold ice

The Peninsula Chicago's 6th-floor rooftop lounge opened in 2018 promising 'globally inspired' cocktails built for a crowd that wants the drink to be as much of a show as the skyline view, and it's mostly delivered on that promise since. The signature Manhattan Royale leans on top-shelf Elijah Craig 18-Year or WhistlePig 15-Year rye, finished tableside with a choice of truffle or saffron bitters and poured over ice laced with real 24-karat gold — a genuinely theatrical move for a classic cocktail. The Disco Fever takes that energy further: a large-format Absolut Elyx drink served inside a rotating tabletop disco ball, built explicitly to get photographed.

For a table that wants volume over spectacle, CoZmos come five at a time, chilling in a Champagne bucket. It's a hotel bar in the fullest sense — polished, a little over-the-top, clearly priced for an occasion — with a terrace that delivers real skyline views to match the theatrics. Guests under 21 aren't allowed in after 6pm, and larger parties (nine-plus) need to email ahead, which tells you this isn't a casual drop-in spot so much as a destination to plan around.
