Wurst Behavior turned a former taqueria into an Irving Park sausage house with real range: six handmade sausages a day, running from classic bratwursts to a Nashville-hot-chicken-inspired dog to an all-beef, house-smoked take on the Chicago dog itself.

It's run by the same team behind Pierogi Kitchen, Ella's BBQ, and Earl's BBQ, and that Polish lineage shows up clearest in the chef's own Kielbasa — caramelized onions, sport peppers, and a house-made hazy IPA mustard — plus pierogi and potato pancakes rounding out the menu.

The Infatuation gave it an 8.0, and Eater Chicago named it in its September 2025 hot dog guide update, with most dishes running around $10 and a beer garden expansion planned to add roughly 50 more seats.
