The approach hasn't changed either: brisket and pork slow-roasted for 14 hours over a wood-burning fire pit, ribs smoked for 6, and three house sauces (Chicago Sweet, Memphis Tangy, Carolina Mustard-Butter-Garlic) to cover every regional lean.

A thoughtful detail for a barbecue joint: every side is vegetarian or vegan, so the sauce and the smoke stay the star of the plate without boxing anyone out.
