The lineup is small-batch and a little offbeat. Sunbird Rum, distilled from blackstrap molasses, is mildly sweet and slightly funky and is the cornerstone; re-distilled with botanicals, it becomes Sasha Gin, with juniper, citrus peel, cardamom and lavender. There's a rye-forward Malt Whiskey, a Bourbon Whiskey with notes of chocolate, vanilla and a hint of leather, and a single-barrel Barrel Aged Rum that sips almost like a whiskey. The cocktail list is where it all comes together, at about $15 a drink: an Oat Fashioned with aged rum and toasted oat syrup, a chai-infused-rum Dirty Hippy with oat milk, a Toranto built on house-made fernet, a Lovely Rita with rum, mezcal and amaro, and daiquiris from classic to Earl Grey and hibiscus.
Local drafts from Revolution and Hubbard's Cave and a short wine list cover everyone else, and the kitchen is snacks only, think hot pretzels and cookies. Happy hour runs Tuesday through Friday from 4 to 7 with a discounted cocktail menu, and Tuesday Treats gets you a free hot pretzel or two cookies when you buy two cocktails. It's 21 and over, closed Mondays, and books private parties in the tasting room.
