Suncatcher Brewing turned a former gas station near Chicago Avenue and Grand into a small, deliberately old-world taproom — co-founded by Matt Gallagher (also behind Half Acre Beer Company) with his wife Laura and former Half Acre staffers Sally and Rog McGuin.
