Since opening in a Mount Prospect strip mall in July 2013, the menu has organized itself around three regional miso styles: a dark mame (soybean) broth used in the Nagoya-style bowl with miso-marinated cha-shu and panko-breaded fried shrimp, a Hokkaido-style kome miso broth loaded with vegetables and fried sweet potato in the yasai ramen, and a sweeter shiro miso base meant to be cut with spicy miso paste and chile oil. The Hokkaido Cha-Shu Ramen has earned 'No. 1 Best Seller' status on the current menu, with the Tokyo and Ise Cha-Shu versions both marked as staff recommendations, all landing in the low-$20s. House-made gyoza and Japanese fried chicken round out the sides.
It's open daily, 11:30 a.m. to 9 p.m., with pickup orders starting right at opening — a long, consistent window for a suburban strip-mall ramen shop. No happy hour applies to a ramen-focused counter with no real bar program, but a Tokyo-chain pedigree and a genuinely specific miso-first concept is a rarer find in the suburbs than another generic tonkotsu shop.
