NADC Burger Fulton River District is the Chicago outpost of the Austin burger counter that two unlikely partners built after skate sessions: pro skateboarder Neen Williams and Michelin-starred chef Phillip Frankland Lee.

They started tinkering in 2021, chasing a nostalgic, perfect cheeseburger, and landed on one burger and only one: two thin 3-ounce patties of 100 percent wagyu beef, New School's real American cheese, secret sauce, onions, pickles and jalapeños they describe as slightly tamed, with enough tang to cut through all that wagyu fat. The name stands for Not A Damn Chance, which is roughly how much room the menu leaves for indecision. A double runs $16 and a single $9, modifications are allowed, and there's a kids burger for $8. The fries are the other half of the cult: twice fried in beef tallow and served with a chipotle peppered ketchup, or upgraded to Beast Mode with cheese, diced pickles, jalapeños, special sauce and the house steak seasoning.

Finish with a brown butter chocolate chip cookie. This Milwaukee Avenue spot took over the address that used to be The Drop In, a block from the river, and a second Chicago NADC runs in Wicker Park. Hours run 11:30am to 10pm Sunday through Wednesday and until midnight Thursday through Saturday, and you can order ahead online.
