Maize + Mash opened around 2017 at 430 N Main St, in a downtown Glen Ellyn storefront that previously housed Deacon & Mercy and, before that, Cab's Wine Bar Bistro.

The group behind it also runs Barrel + Rye and The Burger Local in downtown Geneva and, later, The Burger Social in Wheaton — a small west-suburban mini-chain rather than a one-off. The menu leans into shareables (oysters, bone marrow, a house board) alongside sandwiches, salads, local beer, and a bourbon-forward cocktail list; $1 wings (4-minimum order) run select days.
