This is Lou Malnati's very first location, opened in 1971; several staff have worked there since the 1970s. Lou Malnati and his wife Jean opened it on March 17, 1971 -- Lou had learned deep dish from his own father, Rudy Malnati, while the two co-managed Pizzeria Uno in the 1950s. Opening day itself became part of the legend: a car crashed through the wall of the main dining room during dinner service, and hungry customers reportedly kept eating anyway.
