Pepe Barajas opened La Josie on Randolph Street in May 2017 and named it for his late aunt, Josefina Villegas, whose family cooking from Jalisco is the backbone of the menu.

That's the honest pitch: not fusion, not a concept, just the food of tequila's home state done with real care, which is how a West Loop taqueria ended up with a Michelin Bib Gourmand in 2023. Tacos come on hand-pressed corn tortillas, from cochinita pibil with habanero salsa to suadero, short-rib norteño and a lamb-neck quesabirria you dunk in consommé. The drinking side is just as serious. There are three agave bars, one of them on a seasonal rooftop, and an "Agave Bible" of 100-plus tequilas, mezcals, raicillas and sotols that reads more like a field guide than a cocktail list. The week is built around deals.

Happy hour runs Monday through Wednesday from 4 to 6pm and Thursday and Friday from 3:30, with $10 margaritas and $5 Monopolio. Taco Tuesday brings $14 plates of two tacos from 6pm to close. Tardeadas on Sunday from 4pm and Monday from 6pm put single tacos at $6 and mezcal pours at $6. Weekend brunch opens at 11am with chilaquiles, dulce de leche toast and $20 bottomless mimosas. Reserve on Resy or order takeout through Toast.
