Kai Zan

Super GemUkrainian Village · Japanese/Omakase Community-sourced, unverified
📍 2557 W Chicago Ave, Chicago, IL 60622

Kai Zan opened in 2012 as the project of twin brothers Melvin and Carlo Vizconde -- Chicago's self-described "sushi twins" -- who'd already spent close to two decades between them working other Japanese kitchens before striking out on their own.

It's a 22-seat BYOB, casual rather than white-tablecloth, with Melvin's Japanese wife's influence shaping the kitchen's approach to authenticity. The room doesn't try to look the part of a fine-dining sushi counter, which is exactly why regulars say the quality of the fish catches people off guard. Here's the actual value case: bring your own bottle for a corkage fee that different sources put anywhere from $5 to $15 a table, and the omakase itself runs well below what comparable sushi counters charge -- estimates across reviews range from roughly $50 to $75 a person depending on the night and course count.

It's small and fills fast, so plan on a wait-list rather than a guaranteed table. A 2013 Chicago Magazine Best New Restaurant nod and a spot on the Michelin Bib Gourmand list back up what the oyster-shooters-into-eleven-courses lineup already tells you.
