Chef Gene Kato — founding chef of Japonais for nine years across Chicago, New York, and Las Vegas, now Executive Chef Partner of Momotaro and its Michelin Guide-listed basement bar The Izakaya — opened Itoko on Lakeview's Southport Corridor as a neighborhood Japanese and robata spot. "Itoko" means "cousin" in Japanese, describing its relationship to Momotaro rather than a random name.
