The classic stouts you already know — Draught, Extra Stout, Foreign Extra Stout — still ship over from St. James's Gate in Dublin, but the real reason to visit is what the Chicago brewing team makes on-site: 12 to 16 rotating taps of new, experimental recipes you genuinely can't get anywhere else, brewed right in Fulton Market since the taproom opened in September 2023. The food and drink side launched with real local credibility, too, pulling in West Town's Aya Pastry and Intelligentsia Coffee as opening partners rather than building an in-house bakery and coffee program from scratch. Weekend brunch runs 9am to 2pm Saturday and Sunday, and the full restaurant and taproom stay open late into the evening most nights — midnight on Fridays, with Saturday opening as early as 9am for the full brunch-through-last-call stretch.

Reservations are recommended though not required, a sign of how popular this has become since opening. For anyone working through West Loop's dense restaurant row, it's a legitimately unique destination rather than a novelty brand outpost.
