Guillotine Bakery is a French import shop disguised as a neighborhood bakery — Vincent Didry and Alize Bikard, with head baker Vince Le Bec, took over a former art-gallery storefront on West Chicago Avenue (right next to Brasero) and built the whole operation around one thing most bakeries treat as a side dish: the croissant.
