It's the chain's late-night location, open until 1am on Fridays and Saturdays. Fat Rosie's calls itself Chicagoland's "loud and proud Mexican fave," a chain that has grown since 2015 out of a founding story about a chance meeting in Mexico among its founder, an agave farmer and the farmer's loyal donkey. The "Ass-Kickin' Margs" are the headline: a house blend of 100% blue agave Tradicional Blanco on the rocks, plus strawberry-jalapeño, a hibiscus mezcal Jamaica Ahumada and the ghost-pepper Mango en Fuego. The food is crowd-pleasing Mexican with a little extra.

Guacamole del día comes with your choice of pico, pineapple morita or habanero-mango salsa, queso arrives under salsa suiza, and tacos come three to a plate on corn, flour, tostada or lettuce. Happy hour runs Monday through Thursday from 3 to 5:30pm, with half-off 18 oz margaritas and $5 queso. Weekend brunch starts at 10am. It's open 11am to 10pm Monday through Wednesday, until midnight Thursday, until 1am Friday and Saturday, and 10am to 10pm Sunday.
