El Asador has run out of a storefront on 47th Street in Gage Park since 2015, under the Quintero family, and it would be a perfectly solid neighborhood Mexican breakfast-and-carne-asada spot even without its signature move.

A pandemic-era original — two cheese-loaded flour tortillas stuffed with birria and served with a consome dip for dunking, alongside birria ramen and a birria torta, at a family-run Gage Park kitchen since 2015.

That move is the Birria Pizza, a pandemic-era invention that takes two flour tortillas, loads them with birria meat and a genuinely absurd amount of cheese, and serves the whole thing with a cup of consome for dipping — Chicago's pizza instinct grafted directly onto birria's current moment, rather than a gimmick bolted onto a normal menu. It didn't stop there: birria ramen and a birria torta followed, both treated as real menu items rather than one-off stunts, alongside the carne asada and house-made tortillas that were the point before any of this started.

Large portions and friendly service are the recurring notes in local coverage, and it's become enough of a destination that a national news crew drove out to Gage Park specifically to film the pizza getting made.
