Founder Erin is a self-described lover of the Chicago restaurant and comedy scenes. Her team, which includes Yoli and kitchen manager Brittany, a.k.a. the Piping Queen, turns out wedding cakes, sculptural custom cakes and dessert tables from the Racine Avenue studio. The key detail is the frosting. Every cake is finished with a vanilla Italian meringue buttercream the studio itself describes as "not very sweet," so it isn't the powdered-sugar frosting of grocery-store birthdays. The cake flavors (vanilla, chocolate, red velvet, almond, lemon and marble) pair with fillings like passion fruit whipped ganache, raspberry whipped mascarpone and caramel mousse.
It isn't a walk-in bakery, since everything is made to order. Signature cakes, a collection of more than 20 semi-custom designs, need five days' notice, custom cakes need two weeks, and wedding cakes start at $11 a serving. The easy way in is the $60 Flavorites Box, which samples six cakes and ten fillings for two or three people. The fun way in is a BYOB cake decorating class. Pickup and local delivery run Wednesday through Saturday.
