Co-founders Roundtree and Peter Guardalabene started Downstate Donuts in late 2018 after tasting a potato doughnut in Portland, Maine, and realizing Chicago had none — they sold from a bike before opening a storefront, took the top prize at Chicago's DonutFest in early 2019, then survived a fire at their shared kitchen that briefly halted production.

Holds a 4.8 Google rating; the shop also gets donut tots into Foxtrot Markets around town and runs mobile trikes at events, though this Wilson Ave storefront is the only physical location. Closed Monday and Tuesday.
