Daeji Dough Company started as a farmers' market stand, and a little over a year later owner Albert Song had earned enough of a following to open an actual brick-and-mortar in a late-19th-century building on Belmont — the kind of fast turnaround that usually means the food was never really the question.

The name is a tell: daeji is Korean for pig, Song's zodiac sign, and the menu runs the same playful, specific logic through everything on the shelf. The signature is a tteokbokki croissant — yes, the spicy Korean rice-cake dish, laminated into pastry form, which is the kind of idea that sounds like a gimmick until you actually eat it and it isn't.
