Bisous

Food + DrinkFulton Market · Cocktail Bar Community-sourced, unverified
📍 938 W Fulton Market, Chicago, IL 60607

Bisous doesn't hide its influences — a 1960s Paris fantasy rendered in globe lights, velvet booths and patterned wallpaper on a Fulton Market block that otherwise skews industrial.

$$

Bartender Peter Vestinos (by way of Sparrow) built a martini-forward menu that landed the bar at No. 39 on North America's 50 Best Bars 2025: a classic Vesper, the Tuxedo No. 21 (Citadelle Vive le Cornichon gin, dry vermouth and maraschino in an absinthe-rinsed glass), chilled freezer martinis, plus a curated Champagne and vermouth list for anyone easing in slower.

It's a pre-dinner drinking room built for lingering, not a quick stop — arrive early on weekends or expect a wait.
