Bar Bambi is cocktail-bar veteran Katie Renshaw's first solo project, and the resume backing it up is serious — 2017 Speed Rack Midwest champion, 2019 U.S. World Class Bartender of the Year, with stints behind the bar at Aviary, Billy Sunday, GreenRiver, and Hawksmoor Chicago.

The Three Decibel Rule — a lychee-martini riff with clarified lychee and bell pepper, creme-fraiche-washed vodka, and Cocchi Americano — from a 2019 U.S. World Class Bartender of the Year on her first solo project.

The drinks match the pedigree: clarification, fermentation, and forced carbonation show up across a rotating menu, with the Three Decibel Rule — a lychee-martini riff built on clarified lychee and bell pepper, creme-fraiche-washed vodka, and Cocchi Americano — as the signature. There's a real zero-proof and natural-wine program alongside the cocktails, not just an afterthought drink or two.

Chef Nicklus Byrns (ex-Elske) handles the bar snacks, and the room itself is a design statement — Gensler-designed, with a neon fixture over the bar Renshaw calls the 'sexy spaghetti.' It opened in West Town in February 2026 and picked up a feature in Chicago Magazine's June/July issue. No happy hour or discount turned up in research — this is a technique-forward cocktail bar built on craft, not a deal.
